Cucumber and yogurt salad

This is one of my favorite go to salad when I’m in need of something refreshing, rehydrating and just simple as cucumber and yogurt. There are times when this was my replacement for light dinner or breakfast. It is something that I can’t get enough with…



Perfect side or even dressing for any fish or meat, it will bring little twist in any dish…


Ingredients :

1 Cucumber, grated
1 garlic clove, grated or minced
3 tbsp Salt
1 tsp Pepper
½ cup Dill, chopped
500 ml Greek yogurt
Zest of ½ lemon
1 tbsp lemon juice
1 tsp Olive oil

Method:
  • Place the cucumber in large bowl and add in 3 tbsp of salt (Do not worry about the large amount of salt, its purpose is to drain the water from the cucumber, so most of it will fall out with the cucumber water)
  • Let the cucumber stay with the salt for about a minute and then squeeze the excess water out of it. Thy to squeeze as much as you can because the water will make the yogurt watery.
  • Next add in the yogurt, dill, lemon zest and juice, garlic, pepper and mix until combine. Try it and add more salt if you find that it need to.
  • Pour the olive oil on top, lightly stir and serve.
